The kids cleaned and cut up the pumpkins last night as I cleaned and roasted the seeds. As always it is a mess and fun at the same time. The seeds turned out perfect and I have already eaten way to many. I always soak the seeds and clean them up, then add the Kosher salt and let them soak for a few minutes. Then drain them and then put on pans, then sprinkle more salt over the top of the seeds and cook at 250 for about 2 hours. Perfect. Later..
